Chicken & Rice
 
4 skinless, boneless chicken breasts
3/4 cup rice (uncooked)
3/4 tsp. Spices to taste
2 cups frozen mixed vegetables
1 2/3 cups water
1 can condensed cream soup
1/2 cup shredded cheddar cheese
 
Mix all ingredients except for the chicken and cheese and put into a 2-quart caserole dish. Place chicken breasts on top of the rice mixture. Bake at 375 for 45-55 minutes until chicken is done. Remove from oven and cover with cheese. Let stand 5-10 minutes before serving.
